  • 1.5 pounds Beef stew meat Cut into bite-sized pieces
  • 1 pound Baby potatoes Halved for even cooking
  • 1 tablespoon Olive oil For searing the beef

Garlic Butter Sauce

  • 4 tablespoons Unsalted butter Melted
  • 3 cloves Garlic Minced
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • ½ teaspoon Dried thyme
  • ½ teaspoon Dried rosemary
  • ½ teaspoon Salt Or to taste
  • ¼ teaspoon Black pepper
  • ¼ cup Beef broth

Instructions
 

  • Gather all ingredients and cut the beef into bite-sized pieces and halve the baby potatoes.
  • Optional: Parboil the baby potatoes for 3-4 minutes to soften them slightly.
  • Heat olive oil in a large skillet over medium-high heat and sear the beef bites until browned on all sides, working in batches if necessary.
  • In a small bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to create the garlic butter sauce.
  • In the slow cooker, place the halved baby potatoes on the bottom and add the seared beef on top. Pour the garlic butter sauce over everything and add beef broth.
  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender.
  • Let the dish rest for about 10 minutes before serving to allow flavors to settle and sauce to thicken slightly.

Notes

For best results, don't skip the searing step as it develops deep, rich flavors. If sauce seems thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into slow cooker during last 30 minutes. Store leftovers in refrigerator for 3-4 days or freeze for up to 3 months.
