Ingredients
  

Casserole Base

  • 14 oz Nacho Cheese Doritos party size bag, lightly crumbled
  • 1.5-2 lbs Ground Beef
  • 1 can (10.75 oz) Cheddar Cheese Soup condensed, do not dilute
  • 1 can (10.75 oz) Cream of Chicken Soup condensed, do not dilute
  • 1 can (12 oz) Evaporated Milk
  • 1 can (4 oz) Diced Green Chiles small can
  • 2-3 cups Shredded Mexican Cheese Blend divided between layers
  • 1 packet Taco Seasoning optional but recommended

Optional Toppings

  • Sour Cream to taste
  • Diced Green Onion to taste
  • Sliced Cherry Tomatoes to taste
  • Sliced Avocado or Guacamole to taste
  • Salsa to taste

Instructions
 

  • Preheat your oven to 350°F. Spray a 9x13 inch baking dish generously with non-stick cooking spray and set aside.
  • In a large pan over medium-high heat, brown the ground beef, breaking it apart as it cooks. Drain off the excess fat. If using taco seasoning, stir it in now until fully combined with the meat.
  • Add both cans of soup, the evaporated milk, and the diced green chiles directly to the pan with the cooked beef. Stir everything together over medium heat until fully combined and bubbling gently. Do not rush this step — the sauce should be hot and bubbly before layering.
  • Add half the bag of Doritos to the bottom of the prepared baking dish. Crumble them lightly as you add them — aim for rough, irregular chunks rather than fine crumbs. Spoon half of the meat mixture evenly over the chips, then sprinkle about 1 cup of shredded Mexican cheese on top.
  • Repeat the layers: add the remaining Doritos (crumbled lightly), the rest of the meat mixture, and finish with the remaining shredded cheese. Add extra cheese between or on top of layers if desired — there is no such thing as too much here.
  • Bake uncovered for about 20 minutes, or until the cheese is fully melted and the edges are bubbling. Let the casserole rest for 5 minutes before serving. Top with sour cream, green onion, tomatoes, avocado, or salsa as desired.

Notes

Don't over-crush the chips: Keep them in rough chunks, not dust. Large irregular pieces create better texture and prevent the bottom layer from turning mushy.
Let the sauce bubble: Heating the meat mixture until bubbly before layering ensures an even, faster bake in the oven.
Use evaporated milk, not regular milk: Evaporated milk is thicker and creamier and makes a significant difference in the sauce texture. Do not substitute.
Chicken variation: Swap ground beef for shredded rotisserie chicken for a different spin. The creamy soup sauce works equally well and is a great way to use up leftovers.
Spicier version: Use hot salsa, add a diced jalapeño to the meat mixture, or swap mild green chiles for fire-roasted ones.
Different Dorito flavors: Cool Ranch or Spicy Nacho Doritos both work as fun swaps that change the flavor profile completely.
Chips went soggy fix: Make sure the meat sauce is thick and bubbly before layering, and get the casserole into the oven promptly after assembling.
