  • 1 Turkey (thawed) 12–18 lb (5.4–8.2 kg); allow 1 lb per person
  • 1 Onion (quartered) For cavity and roasting pan
  • 1 Lemon (quartered) Adds brightness
  • 1-2 sprigs Fresh rosemary Plus 1 tbsp chopped
  • 1-2 sprigs Fresh thyme Plus 1 tbsp chopped
  • 1-2 sprigs Fresh sage Classic pairing
  • to taste + 1 tsp Kosher salt For seasoning and butter
  • to taste + ½ tsp Black pepper Freshly ground
  • ¾ cup Unsalted butter (softened) Room temperature
  • 6 cloves Garlic (minced) Fresh only
  • 3 ribs Celery (chopped) For roasting base
  • 2 Carrots (chopped) Adds sweetness

Instructions
 

  • Remove the turkey from the refrigerator one hour before cooking. Pat dry thoroughly with paper towels to ensure crispy skin.
  • Preheat oven to 325°F (160°C). Season the cavity with salt and pepper, then stuff with onion, lemon, and fresh herbs.
  • Combine softened butter with minced garlic, chopped rosemary, thyme, salt, and pepper to make the herb butter.
  • Gently loosen the skin from the breast and spread one-third of the herb butter underneath. Rub the remaining butter all over the exterior.
  • Arrange onion, celery, and carrots in the roasting pan as a bed for the turkey. Place the bird breast-side up and tuck the wings under.
  • Roast for about 15 minutes per pound, until the thickest part of the thigh reaches 158–160°F (70°C). Tent with foil if browning too fast.
  • Remove from oven and rest for 30 minutes, loosely covered with foil, before carving to retain juices.

Notes

For a maple-glazed variation, brush the turkey with pure maple syrup during the last 30 minutes of roasting for sweet, mahogany-colored skin. Skip basting—the herb butter locks in moisture beautifully.
